Wayne Gibson is the chef at the Coop, the in-house summer café at . After his successful run there last summer he has once again taken on the challenge, along with his South Coast Local Diner. Now he is also the chef at the just down the road from Sakonnet Vineyards. Chef Gibson keeps it local at all of his establishments. He scouts out the local farmers and does business with them. That includes local, fisherman, lobster men, vegetable farmers, and cheese makers, local vineyards, brewers; he likes to support the surrounding communities.
The Coop is very casual and you walk up to the window to order your food. The meal is then delivered to you at your table when it is ready. Tables are al fresco under beautiful shade trees overlooking the vineyard. In inclement weather there is a covered porch.
The menu is classic but with a fresh twist on old favorites. For instance the vineyard's dog is all beef ¼ ‘R, split and grilled with corn relish. The Earl Burger is served on a wheat bun with bacon, Swiss, onion confit with Pinot catsup. By the way Chef Gibson is working on a line of products for Sakonnet such as the Pinot catsup. In addition to the menu there are specials every day.
You can buy a glass or bottle of wine and enjoy it with you food. For the kids, PB and grape with the crusts cut off. Crunchy French toast stix rolled in corn flakes or a grilled quesadilla made with American cheese on a flour tortilla. All are served with a fresh side of cole slaw, potato salad or tomato and cuke toss.
